Eating Fish Caught by Oldest Son

Husband and kids went fishing today on the Bay of Banderas. They went with Other American Family Dad and his 3 boys.

Oldest Son and Other Oldest Son caught a couple Needle Nose Fish. Lots of teeth, little scary looking and too bony to eat. The wow factor was pretty high for 5 little boys ages 8 and under!

Oldest Son also caught what we think is an Amberjack Fish. It was cleaned and brought home for dinner. Husband marinated and grilled the Amberjack Fish. He also made homemade Mexican Rice and Chayote (our first attempt to cook and eat Chayote.) Kids could not eat it fast enough. Oldest Son was so proud to have caught this fish and provide to family to eat. He has talked about it all day.

What a fun day for the boys.

I cook chayote regularly. I like to cut chayote, carrots and zucchini in cubes about 1/2 inch. Dice about 1/2 large onion. Put chayote, carrots and onion in a little oil and saute until a little tender. Add Zucchini a little chicken broth, cover and cook just until the zucchini is soft. Add salt and pepper to taste.

What a great adventure. When I was 6, my uncle took my brother and me fishing in the stream on his ranch. I caught a rainbow trout and my brother (who was 4) caught a Dolly Varden brown trout. We could not have been happier had we been puppies. But we never had the awe-inspiring experience of catching a real live sea monster. (That is what we would have thought of the needlefish. My uncle would have known better.)

I have said it before, and I am certain I will say it again: your boys are going to remember this year as being a series of magical moments. What a great gift you are giving them.

Oh how fun! Sounds like a terrific meal and day.

We love chayote around here, I use it a lot in soups and stews. Cream of chayote soup is delish! (I don't have a recipe, I just google then fiddle around with whatever is at hand).
